VEAL BURGER
BLUE CHEESE, APPLES & CARAMELIZED ONIONS MAPLE PORT

Makes 4 burgers!

INGREDIENTS

BREADS

4 burger buns of your choice

(We chose a brioche bun with onions on it).

CAKES

1 ½ lb Lean ground veal

3 tbsp. at the table “Butcher’s Block” spices, Kanel spices

2 tbsp. at the table Garlic flowers in oil

Salt to taste

CONDIMENTS

1 Granny Smith apple, thinly sliced

1 (300g) Camembert-style blue cheese

2 thinly sliced tomatoes

1 English Cucumber

Fresh basil leaves

Mixed or Boston lettuces

MAYONNAISE WITH MEAUX MUSTARD

4 tbsp. at the table Mayonnaise

2 tbsp. Meaux mustard

Fleur de sel & ground pepper

CARAMELIZED ONIONS, CRANBERRY PORT & MAPLE

2 large white onions

1 C. at the table Butter

1 C. Canola oil

212 ml Cranberry, port & maple @canneberge

Fleur de sel & ground pepper.

For a vegan version: replace the veal with a vegan pancake and the blue cheese with a blue fauxmage.

Replace the mayonnaise with vegenaise.

Replace the butter with olive oil.

PREPARATION

Patties

In a bowl put the chopped veal. Add the garlic flower, Bloc du Boucher spices and fleur de sel. Mix gently. Form 4 patties of the same size, not compacting the meat too much. Press gently with your fingertips to keep the patties juicy and with a more interesting texture. Reserve in the refrigerator

Caramelized onions

In a non-stick pan over medium heat, caramelize the onions in the oil and butter for 10 to 15 minutes, stirring regularly.

Add the jar of cranberry port & maple, mix and reduce until no more liquid remains.

Meaux mustard mayonnaise

In a small bowl mix the mayonnaise and Meaux mustard. Add the fleur de sel and ground pepper.

Condiments

Slice the apples, tomatoes, cucumber and blue cheese

Prepare the Meaux mustard mayonnaise

ASSEMBLY OF THE BURGER

Cook the veal patties on the BBQ.

On the bottom of the bread, place caramelized onions. Add a veal patty, slices of blue cheese, apple slices, 1-2 slices of tomatoes, cucumbers and lettuce. Brush the upper part of the bread with the Meaux mustard mayonnaise.
