Makes 1 serving


1/2             Bbq smoked or baked chicken breast

2              Bacon slices

2 tbsp. at table     Goat cheese

2  vs. at table   Nutra-Fruit Onion & Cranberry Confit

1/2             Red or yellow bell pepper, cut into strips

Baby spinach

Finely chopped red cabbage

1  net           Nutra-Fruit Cranberry, Maple & Balsamic Vinaigrette

Vegan alternative at the bottom of the recipe!


For a vegan version: replace the chicken with seitan and the cream cheese with goat-style cream fauxmage.

Substitute vegetable bacon for the bacon.


In the center of  tortillas  brush the goat cheese in a strip of about 2 inches, distribute the spinach over the cheese, place the chicken, the onion and cranberry confit , the peppers, the red cabbage and the bacon. Add a drizzle of maple and balsamic vinaigrette. Close the tortillas, taking care to close one end by folding it inwards. Heat a pan with a drizzle of oil and place the roll with the opening face down against the pan and leave to brown. If you have a panini grill now is the time to use it. Enjoy your lunch!
