SMOKED CHICKEN & BACON

Makes 1 serving

INGREDIENTS

1/2 BBQ-smoked or oven-baked chicken breast

2 slices of bacon

2 tbsp. Goat cheese

2 tbsp. at the table Onion & cranberry confit @canneberge

1/2 red or yellow pepper, cut into strips

baby spinach

Finely chopped red cabbages

1 drizzle Cranberry maple & balsamic vinaigrette @canneberge

For a vegan version: replace the chicken with seitan and the cream cheese with goat-style cream cheese.

Replace the bacon with vegetable bacon.

PREPARATION

In the center of the tortillas, brush the goat cheese, forming a strip of about 2 inches, spread the spinach over the filling, place the chicken, the onion and cranberry confit, the peppers, the red cabbage and the bacon. Add a drizzle of maple and balsamic vinaigrette. Close the tortilla, taking care to close one of the ends by folding it inwards. Heat a pan with a drizzle of oil and place the roll with the opening face down on the pan and let it brown. If you have a panini grill now is the time to use it. Enjoy your food!
