TECHNICAL

Cook the pearl barley, rinsed and let cool in the refrigerator.

Cut all the salad ingredients, broccoli, apple, celery, radish, feta and the previously grilled pecans and place them in a large salad bowl. Add the cranberries  COSMO LIME  then set aside.

Add the barley when it is well cooled.

Prepare the dressing:

In a bowl, mix the Greek yogurt, mayonnaise, maple syrup, lime zest and juice, mix vigorously. Add salt and pepper to taste.  

Mix creamy dressing with salad ingredients and refrigerate. 

This recipe can be made ahead and will keep for a few days in the fridge.

For a vegan version: replace the feta cheese with a vegan feta.

Replace the mayonnaise with a  vegetable mayonnaise and Greek yogurt with a vegetable yogurt

INGRÉDIENTS
3 tasses            Eau
1 tasse              Orge perlé

2 tasses            Brocoli en petits bouquets

1                           Pomme verte en petits cubes ou en fines tranches

3 branches      Céleri

6                           Radis finement tranchés

1/3 tasse          Pacane grillée

1/2 tasse          Canneberge à saveur cocktail COSMO LIME

1 tasse               Féta en petits cubes ou émietté

Fleur de sel & Poivre en grains du moulin

 

VINAIGRETTE CRÉMEUSE

1/2 tasse           Yogourt grec nature

2 c à table         Mayonnaise

1                            Jus et zeste de lime

1/4 tasse           Sirop d’érable

Fleur de sel & Poivre en grains du moulin
