SCONES
WITH CRANBERRIES
& CHOCOLATE

Vegan alternative at the bottom of the recipe!

So good!

Makes 12 scones.

INGREDIENTS

DRY MIX
2 cups         Flour
1 C. at the table    Baking powder
1 pinch         Salt
1/4 cup       Cold butteror vegetable butter
1 cup            Cranberries coated with dark chocolate cut in 2

 

WET MIXTURE

2                        Eggs or mixturechia and water
1/3 cup       Sugar
1/3 cup        Milk or vegetable milk

1/3 cup       Orange juice

Zest 1 orange

For a vegan version: Replace the butter with vegan butter; & eggs by 1 tbsp. of chia seeds and 5 ml of water.

PREPERATION

Preheat the oven to 375 F.

Place parchment paper on a baking sheet. In a bowl, combine the dry ingredients; flour, baking powder, salt then add the cold butter and break up the butter with your fingers to incorporate it and form a crumbly mixture. Add the cranberries coated with dark chocolate, sliced in half and the orange zest. To book.

In a bowl, beat the eggs with the sugar, add the milk and orange juice. Stir. Combine the 2 mixtures, alternating the dry and wet ingredients, taking care not to over mix. When the mixture is homogeneous, form a large disc of dough ½ inch thick on the parchment paper.  Using a knife, make 12 points in the disc. Brush with a little milk if desired. Bake in the center of the oven for 30 minutes. Take out of the oven and cut off the tips. Sprinkle with powdered sugar if desired.
