COD STIR FRY
Serves 2 as a main course
2 Cod fillets (approximately 150 g each)
1/4 cup Butter
1/2 tsp. Turmeric powder
1 tbsp. Steak spice
1 pinch of turmeric
1 pinch of NUTRA-FRUIT Cranberry powder
1 pinch of Matcha green tea powder
Mix ½ tsp. of turmeric with the steak spice. Sprinkle onto the cod fillets. Lightly rub the spices onto the fillets to allow them to absorb. Put the fillets on a plate, cover with plastic wrap and put them in the fridge for an hour. Preheat the oven to 350 °F. Squeeze and zest the lemon and set aside. Melt the butter in a non-stick pan at medium-high heat. Sear the fillets for 2 minutes on each side while continually basting them with the melted butter. Pour the lemon juice on top. Finish cooking the fillets in the oven for 10 minutes. To serve, put the fillets on plates and pour the rest of the melted butter on top. Add the lemon zest. Sprinkle the cranberry powder, green tea and turmeric onto the fillets.
Serve with green vegetables seared with olive oil. Spinach, blanched Swiss chard and arugula are excellent choices. Season with fleur de sel and pepper, then drizzle lemon juice and few drops of cranberry seed oil.
